Hot Apple Cider

Today is just one of those perfect cozy autumn days where you really don't want to do anything that needs done. Just want to be crafty and lazy and cook something delicious.

I made some hot apple cider to warm my toes up. I also put on a super thick pair of wool socks :)

The apple cider I used is from a pretty local farm called Migliorelli.

What you will need:

1 mug full apple cider
2 tbls brown sugar
1 tsp cinnamon

What to do:

Pour apple cider into small sauce pan, heat over medium high until it starts to get bubbly, stirring occasionally. Add the brown sugar and cinnamon. Bring to a boil and boil for about two minutes stirring constantly. Careful not to let it boil over, reduce heat if needed. And that's that, pour into your favorite mug and curl up with a good book or perhaps your favorite pet as I did. :)

Cilantro Eggs on Bagel

A little breakfast I made for myself the other morning.

1 bagel (wheat), sliced in half
handful shredded cheese (mexican)
2 eggs
1/4 cup milk (whole)
1 tbls cilantro
salt & pepper to taste

I started by slicing the bagel in half, placing it on a cookie sheet and sprinkling the mexican cheese on both sides. Then put it it the oven under a preheated broiler until the cheese is melted/crunchy, about 5 minutes. Careful though, it will burn quick!

In a small bowl mix the 2 eggs, milk, cilantro and salt and pepper with a fork until well blended. Pour into greased frying pan. Slide the frying pan back and forth until the eggs are cooked almost through, then flip the eggs. Total of about five minutes.

When eggs are cooked through, remove from pan and put on one side of the bagel, place other bagel half on top. Serve immediately and enjoy!

Honeymoon Photos

Wow! So its been a month since I've posted, so sorry, life has just been crazy! Misael and I got married on August 24 (almost our one month already!) and we were on our honeymoon until the 2nd and now life and just settling in has been fun. Its taken me this long to sort through the near 1500 photos we took on our honeymoon. Yes, my hubby is just as much of a photographer as I am so we share the camera, and some of these photos are his.

Me, Waiting to depart Cape Liberty New Jersey, that is the New York City Skyline in the background

His Wedding Ring :)

So thats a brief summary of our trip. It was amazing, although no joke I spent the first three days sleeping cause I was so pooped from all the wedding planning.

We didn't get to spend a whole lot of time in Bermuda, just a day and a half, so we didn't get to explore much. Just did the touristy things. Would definitely love to go back some day.

And would definitely want to go on another cruise. This was the first time either of us had been on a cruise and it was fun (only a little sea sick with dramamine). We sailed with Royal Caribbean on the Explorer of the Seas. Definitely amazing with all you can eat food.

And in Rhode Island we just kinda drove around... stayed in West Warwick, spent a day in Newport, drove around to Providence. Went to the Providence Place Mall, huge mall. Scooted over to Plymoth Massachusetts to look at some Pilgrim history, but probably the highlight of the whole trip- discovering Pinkberry!

Definitely a great start to our marriage.

Almost My Wedding Day

Getting married on Friday! Don't know how it snuck up so fast! I'm like super excited but not at the same time. Its too much for my brain to handle, trying to think out all the little details. I so wish David Tutera could just come and plan the whole thing. Wishful Thinking.

{my garden}

Our wedding will have just about 90 people, barbecue style catering and it will be at my parent's house. For our honeymoon, weather permitting, we will be taking a cruise with Royal Caribbean and traveling to Bermuda. Two days sailing there, two days in Bermuda, and two days sailing back. We get back to New York City on Thursday the 30th and will spend the rest of the trip in Rhode Island just outside of Newport.

{one of my wedding decorations}

Growing up, I've travelled all over the United States, but somehow missed Rhode Island which is just shy of four hours from my home. And I've never been to Bermuda or on a cruise so I am super excited! Will definitely be taking lots of photos with my real camera, not just my iphone.

Why I Created This Blog...

I've created this blog in an attempt to publish some of my life. My life isn't really very interesting, but I'm on a quest to get healthy. Healthy. Really healthy. I'm getting married on August 24th, (29 days) and I'd really just like to feel my best.

My hope is that in a way, this blog, this online journal, for the world to see, will keep me accountable to posting.

I am an aspiring artist. I take photographs. Of people, of creatures, of food, the earth, anything that captures my attention. I also love to crochet, knitting a little bit, and I love cooking, & this has been my first year growing a garden. I have so much to learn still, about everything.

And with all that said...
Today for lunch I made a sandwich with no bread.

Turkey Bread-less Sandwich

2 large romaine leaves
6 slices turkey
2 slices white american cheese
salt and pepper

Place turkey and cheese on half of the romaine lettuce leaf. Sprinkle with salt and pepper to taste. Fold in half. Repeat with other lettuce leaf and remaining turkey and cheese.

And for dinner a salad, not very exciting until you add lots of veggies

August Dinner Salad

1 cup lettuce
1/4 small cucumber, peeled & sliced
2 baby carrots, sliced
1/4 radish, sliced thin
1/4 avocado, sliced
1/2 small tomato
1 small mushroom, sliced
1/4 medium apple, chopped
1 TBLS feta cheese

Pile on a plate and enjoy. Yum!
